Kafe Batwan Food
The food was incredibly tasty and very different, but all worth it for the price and the ongoing re-imagination.
My personal favorite is the Tsokolate Tsampurado with gourmet tuyo for breakfast. Imagine pure brown chocolate on top, and as you dig your spoon in, the creamy mix of milk and “champurado” bursting out. Yes!
The Kansi Panada was a delight with stuffing made out of beef shanks (braised in kansi soup), and served with “batwan” gravy.
The Lamb Kaldereta with sambal beans has a different kick. The sauce is simply delectable with every bite.
Interestingly, “fish-and-chips” has just been re-invented Filipino style. San Miguel beer battered “hito” (a type of fish), with cassava fries constitutes this. The fish melts in your mouth and the batwan aioli dip completes everything.
The Blanco Adobado Manok with pickled cucumber has a fresh taste. To me, it tasted like nostalgia back home, but with a dynamic essence to it.
Kafe Batwan truly provides a very different foodie experience. It is homey at the core, yet modern and different, and more repackaged to make Filipino food relevant to this day.
Kafe Batwan more than just re-characterises food. It brings out Filipino food essence to prove there is more in it to taste and savor. The process of cooking in the most essential sense is what makes this cafe different from the rest. I will surely go back to try the other dishes.
